Some people are firmly convinced that the refrigerator is able to extend the shelf life of absolutely any product. On the one hand, they are right - low temperatures really slow down many processes that bring food spoilage closer. However, there are foods that only get worse from the refrigerator, such as bread.

Why bread is not stored in the refrigerator

It cannot be stated unequivocally that it is forbidden to store bread in the refrigerator. The loaf does not deteriorate directly from the cold. On the contrary, he really doesn’t get stale any longer. But in the cell he is not met by the most favorable environment. There are three main reasons that bread has no place in the refrigerator.

Smells

Bread and other pastries easily absorb odors - especially meat and fish. In the refrigerator compartment, several incongruous aromas usually hover at once: soup, yesterday’s salad, defrosted meat ... And the bread will absorb this whole “bouquet”. Imagine that you take a loaf from the refrigerator, and it tastes and smells of some fish mixed with pickled vegetables. It is unlikely that you will be very pleased to eat it.

Yeast

If you put the roll next to some perishable product, then it will deteriorate ahead of time. Why is this happening? The yeast that is part of almost any bread (except some dietary types) is to blame. Yeast is distinguished by the fact that it interacts very actively with surrounding products. As a rule, this interaction ends in failure (for another product).

If you still need to store bread for a long time (for example, you are bought with loaves immediately for a month), then it is better to put the loaves in the freezer. At temperatures below zero, the yeast stops its activity, and the taste of bread does not deteriorate.

Humidity

It's no secret that if you keep the bread in a very humid place, then mold will quickly form on it. And sometimes the refrigerator’s chamber becomes a corner of high humidity - for example, when you cooked the soup and hid it, loosely closing the lid. If you want to store bread in the refrigerator, you will have to be very sensitive to moisture issues - even a loaf of 5% will not forgive you and will be covered with an unpleasant greenish fluff.

Moldy bread

Sealed packaging will not save from mold - on the contrary, it will accelerate its appearance

Keeping bread in the refrigerator is a tempting, but not always rational idea. If you want to preserve the rolls you bought with a supply, then it is better to send them to the freezer. And for everyday use, buy a bread box.
